Pici with Farmer’s sauce

This typical Siena pasta lends itself well to a rustic sauce, with a strong, decisive, taste, which highlights the connection Siena and its food have with its own land.

Ingredients (for 4 people)

  • 400 g pici (click here for the recipe)
  • 50 g chicken breast
  • 50 g turkey breast
  • 50 g lean pork
  • 50 g beef
  • 50 g porcini mushrooms
  • 50 g tomato sauce
  • 1 glass white wine
  • 1 garlic clove
  • ½ red onion
  • Parsley to taste
  • Extra virgin olive oil
  • Water
  • Salt and black pepper

Instructions

1 Grind all the meats together, cut the mushrooms into cubes, and prepare a mixture of garlic, onion and parsley.
Pour extra virgin olive oil into a pan.

2 Add the minced meat, salt and pepper. Cook over a high heat, turning it regularly. When the juices of the meat have withdrawn, pour the wine and turn it, waiting for evaporation. At this point add the mushrooms and let it cook for a few minutes.

3 Add the tomato and enough water to finish cooking over a low heat.
Boil the pici in plenty of salted water and, once cooked, toss them into the sauce.
